A thing about muffins

I love muffins. Full stop. Whatever flavour, shape or form. Banana, white chocolate and raspberry, carrot, blueberry, pear and ginger, oats and honey … and I can go on like this forever. Blackberry and lemon muffins with icing for today!

1/3 caster sugar
1/3 cup brown sugar
3 cups flour
1 1/2 baking powder
1/2 tsp bicarbonate soda
60 g melted butter
1/3 cup oil
1 tsp vanilla extract
2 eggs
1 lemon (zest only)
1 cup milk
1 cup blackberries (or other summer fruit)

1. Mix dry ingredients in a bowl  (both sugars, flour, baking powder, soda and pinch of salt)
2. In a separate bowl mix lemon zest, melted butter, oil, eggs, vanilla extract and milk
3. Mix contents of both bowls using a spoon and then add fruit
4. Pour the mix into baking caps and bake 20-25 mins at 180c
5. Prepare the icinig: mix 200g icing sugar with juice of one lemon (if too thick use a bit of water), glaze the warm muffins
