A perfect weekend always starts with a lazy breakfast.
A cosy blanket, steaming cup of tea in one hand and a magazine or a tablet with my bloglovin thread in the other are my definition of it.
And of course a perfect weekend breakfast cannot be complete without some fresh-from-the-oven treat to enjoy with my cuppa! Today it was a quick banana cake (ok, calling it cake may be a bit of an overstatement, let’s stick to breakfast bar) with nutella swirls and walnuts. I came across this recipe on Pinterest and repinning it was not enough – I had to try it out instantly – sweet, ripen bananas, warm, oozy chocolate and crunchy walnuts – what’s there not to like?
Banana bar with nutella swirls and walnuts
- 1 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter (room temperature)
- 1/3 cup brown sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/3 cup buttermilk
- 3 ripe bananas, mashed
- 1/4 cup Nutella
- 1/4 cup walnuts
- Preheat oven to 170 degrees
- Combine the dry ingredients: flour, cinnamon, baking powder, baking soda and salt
- In another bowl beat butter and sugar with a mixer until light and fluffy
- Beat in egg and vanilla and mix until well combined
- Add buttermilk and dry ingredients, mix well and then add bananas, mix all together
- Scoop the batter evenly into prepared baking dish. Top with warmed Nutella, swirling the spread into the batter using toothpick
- Sprinkle with walnuts, press gently into the batter with your fingers
- Place into oven and bake at 170C for 30-35 minutes. Cut when the cake cooled down

Thanks Ness! I used 20cmx20cm baking dish for this bake and I got ‘bars’ type result – if you want more rise it may be worth using smaller baking dish or doubling up the ingredients. Enjoy!
