Brown sugar & caramelised pineapple salmon

I have just discovered baking fish is much easier and the result much better than I expected. This delicious brown sugar, honey and caramelised pineapple salmon is marinated in a wonderfully sweet, slightly spicy and totally flavoursome marinade and then it only needs 15-20 minutes to be baked to perfection. The result is perfectly flakey salmon that has quite a strong taste of the marinade and the juicy caramelised pineapple chunks with a hint of chilli. I am definitely going to make this recipe over and over again!

Brown sugar, honey & caramelised pineapple baked salmon (2-4 portions)

  • 4 salmon pieces
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 1/3 cup soy sauce
  • 1/4 cup pineapple juice (I used the tinned pineapple and its juice)
  • 1 tsp mustard (I used wholegrain)
  • 2 cloves of garlic (minced)
  • 1 tsp chilli flakes (if a little heat is desired)
  • 1/3 cup pineapple chunks


  1. Combine the ingredients for marinade in a  bowl or a plastic container that you are going to use to marinate the fish in. Whisk together sugar, honey, soy sauce, pineapple juice, mustard, garlic and chilli flakes
  2. Add salmon and marinate up to 8 hours in the fridge (at least 1 hour)
  3. Heat the oven to 180c
  4. Take out the salmon from the container, place on a baking tracy lined with aluminium foil skin side down, sprinkle with extra brown sugar, add pineapple chunks and pour over the remaining marinade
  5. Baking time depends on the thickness of the fish- as a rule of thumb 1inch (2.5cm) bakes in 10 minutes. Bake until just the salmon flakes easily with the fork – for me it was 12 minutes for the smaller chunks and 15-16 for the larger ones. Be careful not to overcook the salmon as it becomes dry. Enjoy hot or cold, served with veggies of your choice
