Can the afternoon get any more delicious?

Tiramisu is one of my favourite desserts. Originally from Italy, the names translates as ‘lift me up’, which my be quite a challenge after you’ve a had a solid portion of it – it’s a real calorie bomb! There are many recipes for tiramisu, I made a classic one today (dead simple!) but I’m already tempted to make another one with a twist - chocolate, oranges or raspberries and maybe egg whites for the extra lightness. What I love the most about this dessert is the creaminess- this is thanks to the super rich mascarpone cheese, which works great in savoury sauces too (providing you are not watching calories!).

Ingredients (4 portions)

  • 250g mascarpone cheese
  • 1 egg yolk
  • 1tsp vanilla paste
  • 1 tbsp caster sugar
  • 1tbsp alcohol (traditionally amaretto, but you can use others like dark rum or coffee liqueur)
  • 150ml strong coffee
  • cocoa powder or instant coffee for dusting
  • lady finger biscuits

How to make it
1. Mix egg yolk, sugar and vanilla paste in a bowl. Fold in mascarpone and mix gently until smooth
2. In a separate shallow bowl mix coffee with alcohol. Dip the biscuits in the mixture for a second or two (don’t let the biscuits soak completely, they should still be firm)
3. Start layering the dessert in a dish (or individual dishes) – first go the biscuits and then the mascarpone. Repeat the layers (make sure that cream is top layer) and dust with cocoa powder or instant coffee.
4. Leave in a fridge to chill, ideally overnight.
5. Quickly grab a spoon before it is all gone!
