Let’s get grillin’

It has been quiet here for a while.. Too quiet for too long! Luckily it has not been that quiet in my kitchen over the last couple of days and I am going to show you more of what I have up to recently! All that thanks to a good, long holiday break – I am nearly at peace with the fact that it is over now, and I really appreciate the extra time I had to catch up on many of my when-I-have-some-time-I-will-finally: read this book/see this film/ dig out this camera manual and actually read it/ check out these blogs/ learn this software/ clean this closet (delete as appropriate).

I don’t quite get the whole concept of the New Year’s resolutions but this year I have decided to go against myself and actually make one – focus more on what’s important to me. And hopefully it will show here!

Today I quickly whipped up a rather uninspirational but light and very tasty lunch – grilled asparagus with feta cheese, honey & mustard dressing and roasted figs. Hard to beat good old grilled veggies for me!

Grilled asparagus with feta cheese, honey & mustard dressing and roasted figs
Ingredients (2 portions)

  • Asparagus
  • 2 figs
  • 1/3 cup honey + extra for drizzling
  • extra virgin olive oil
  • coarse sea salt
  • fresh ground pepper
  • 3 tbsp Dijon mustard
  • 2 tsp lemon juice
  • feta cheese
  1. Heat the oven to 220C
  2. Drizzle asparagus with the olive oil, sprinkle with sea salt and pepper. Drizzle figs with honey and place both under the grill on a baking tray lined with baking paper.
  3. Grill for 15 minutes and prepare a dressing in the meantime: mix the rest of the honey with mustard, extra virgin olive oil and lemon juice, season.
  4. Dress the asparagus and crumble feta cheese, enjoy with the figs while still hot!
