Fancy some mustard?

I watched one of Jamie Olivier’s 30 minutes (30 mins, are you sure??) meals today and he was making mustard chicken with leeks sauce. Sounds like a weird combination to you? It did for me too! But hey, the two really work well together. I made super quick dauphinoise potatoes to go with the chicken too but this did not at all turned out as expected (totally my fault though, I should give it another go before I can blame Jamie’s recipe for this).

Ingredients (2 portions)
Mustard chicken
two boneless chicken breasts
4 tsp mustard powder
1 leek
salt, pepper
2 cloves of garlic
75 ml single cream
2 tsp wholegrain mustard
1/3 glass white wine
olive oil 

Crispy salad
small white cabbage
1/2 leek
fresh red chilli
fresh parsley
olive oil
salt, sugar, pepper
freshly squeezed lemon juice

How to do it
1. Sprinkle mustard powder over the chicken breast, season with salt and pepper, drizzle with olive oil and rub everything into the meat
2. Fry on a medium low heat, turning the meat halfway through (total cooking time should not be more than 15-17 mins depending how thick the breasts are)
3. Chop your leeks finely and add them to the pan (Jamie separated them for the chicken by placing them on the other side of the pan to let both cook undisturbed), cook until they soften
4. Add chopped/ grated garlic and white wine and mix well
5. Add cream and mustard and cook for a few more minutes (your chicken should be perfectly cooked now)
6. Chop finely the cabbage, red chillis and tear the parsley, mix everything in a bowl. Drizzle with olive oil, season with salt, sugar and freshly ground pepper, add lemon juice to taste
7. Voil?
