First post about cooking may give out the impression I know my stuff. Well, I don’t, not yet at least. But since practice makes perfect I decided to practice today! This recipe, found in some magazine, promised a can’t-go-wrong cake and I decided to test this brave statement.
4 egg yolks
3 cups of plain flour
1/2 cup of sugar
2 tbs baking powder
200g of butter (room temperature)
6 big apples
4 egg whites
1/2 cup sugar
+ icing sugar to sprinkle on top
Sieve flour, add the yolks, butter cut in the little chunks and sugar. Mix everything together using your hands until smooth. Divide the dough into two equal portions and wrap in cling film. Leave in the freezer to chill for at least an hour.
Beat the whites until stiff, then add cinnamon and mix gently with grated apples.
Grate one portion of the dough into the baking tray to make a base. Add the apple filling and then grate the second portion of the dough on the top of it to cover it. Press gently and leave to bake for an hour (180 degrees).
