Plum and marzipan cake

Baby becoming a little more independent now has given me some time to come back to the kitchen and whip up a quick cake with season fruits. This is a really easy, fool-proof recipe that I baked together with a friend – Magdalena. This recipe has proven to still come out ok despite juggling mixing the ingredients, chatting with a friend and entertaining baby.

The recipe was inspired by this recipe  - originally the recipe called for the use of nuts, but not being a big fan of them, I skipped them.


  • 230g flour
  • 1 tsp baking powder
  • 100g ground almonds
  • 150g room temperature butter
  • 150g caster sugar
  • 1tsp vanilla paste or essence
  • 2 eggs
  • 500g plums, halved 
  • 100g marzipan
  1. Warm up the oven to 180 degrees
  2. Sieve flour, ground almonds and baking powder, place in a bowl. In a separate bowl, beat together butter with sugar and vanilla paste using the mixer
  3. Add eggs, one by one and continue to beat adding the flour mix in three parts, combing well after each part
  4. Transfer the cake mix to the baking tin and level using a spoon
  5. Layer marzipan on a top of the cake, tearing it into small pieces
  6. Add plums, cut half up
  7. Bake 50-55 minutes or until an inserted toothpick comes clean
