Quinoa salad

Whoever thinks salads are nothing more than boring, tasteless ‘rabbit food’ obviously hasn’t tried this salad yet. With lots of crunch, different textures and bursting with flavour, this quick salad may be a serious contender in the ‘my favourites’ category.

Quinoa and chickpeas salad with walnuts, radishes and sun dried tomato

  • 2 cups cooked quinoa
  • 1/2 cup cooked chickpeas (I used tinned)
  • rocket
  • 4 radishes
  • 1/4 cup sun dried tomato
  • 1/4 cup chopped walnuts
  • 3 spring onions
  • 1/4 cup feta cheese
  • salt, pepper to taste

honey and lemon dressing

  • 2 tbsp extra virgin olive oil
  • 1 tbsp light olive oil
  • juice and zest of one lemon
  • 1 clove of garlic (finely grated)
  • 1 tsp honey
  • salt, pepper

1. Mix all the ingredients for the dressing
2. In a bowl, mix quinoa and chickpeas, chop vegetables and nuts
3. Pour dressing, mix gently together and crumble feta
