Today I decided to make the most of my lazy Saturday and did not even bother to go out to stock my fridge. So I decided to make a good use of what I already had. Looking for inspirations I came across this recipe, loved how it looked on a plate and imaged it must taste equally good. And it did!
Ingredients (3 portions)
- Pasta (I used penne)
- 300g spinach (I used frozen)
- 30g goat cheese (soft)
- 80ml single cream
- 1 yellow onion
- 1 clove of garlic
- few pinches of ground nutmeg
- salt
- fresh ground pepper
- 1/3 cup of water
- olive oil for frying
How to do it
- Cook the pasta according to the instructions on the packet
- Chop onion and garlic finely (I grate my garlic) and fry with some olive oil for 2-3 minutes
- Add water, spinach and cover the pan. Let it simmer on a low heat for a few minutes (until fresh spinach has wilted / the frozen one has cooked)
- Add cream, nutmeg, salt and pepper and cook until the sauce has thickened
- Plate up and crumble goat cheese on top and sprinkle with some fresh grounded pepper
