Who says chicken is boring? With thousands of chicken recipes there is always something new to try. With its creamy sauce, bright colours and aromas of wine and tomatoes it takes me back to the sunny Italia. I enjoy it with some chilled wine, crusty baguette and green beans. So simple, so delicious! Few basic ingredients and fairly quick preparation (food processor definitely speeds up the job – believe the humble grater owner!) made me, still a novice in the kitchen, fell in love with it instantly. One of my favourites!
300g chicken breast
1/3 cup of white wine
1/4 cup of single cream
How to do it:
Cut the chicken into cubes, sprinkle with chilli, paprica and pepper, fry with some olive oil until golden. Add wine and cook on low heat.
In the meantime chop the carrots and tonions, fry with olive oil. Add garlic (I added two cloves) and tinned tomatoes. Bring to boil and then move the veggies to the pan with the chicken. Add cream, bay leaf, stock and leave on a low heat to simmer for 30 minutes stirring frequently.
